  
As with any great steak, buffalo steaks are best cooked medium rare to medium. Any cut of meat, be it beef or buffalo, can easily be turned to leather if you cook it too long. If you are using a
gas grill, keep the flame set at medium to low. Keep the lid closed to retain moisture. For the first time
you grill buffalo steaks, stay by the grill and keep an eye on them to make sure you don't overcook them.
Generally speaking, an 8oz. buffalo steak will take about 10 minutes to prepare medium.
In the Broiler: Move your oven rack one notch lower than what you would normally broil a cut of beef. Shorten the cooking time and check periodically
On the stove: Keep your stove turned to medium. If you are using a saute pan, use the lid while cooking.
