 | Buffalo Sir fry and Spinach over pasta 1 lb. Buffalo Sirloin steak
6 oz. cooked thin spaghetti
1 pkg. fresh spinach, stems
removed and thinly sliced (10 oz.)
1 can sliced water chestnuts,
drained (8 oz.)
1/4 c. green onions, sliced
2 TBS. red chili peppers, chopped
Marinade:
1/4 c. hoisin sauce
2 TBS. reduced-sodium soy sauce
1 TBS. water
2 tsp. dark sesame oil
2 large cloves garlic, crushed
1/4 tsp. crushed red pepper
Stack steaks; cut lengthwise in half and then crosswise into 1-inch
wide strips. Combine marinade ingredients; add buffalo, tossing to coat.
Cover and marinate in refrigerator 10 minutes. Meanwhile cook pasta
according to package directions; keep warm.
Remove meat from marinade. Bring marinade to a rolling boil; reserve
marinade. Heat large nonstick wok or skillet over medium-high heat until
hot. Add buffalo (half at a time) and stir-fry 1 to 2 minutes or until outside is
no longer pink. (Do not overcook). Remove buffalo; keep warm.
In same skillet, combine pasta, spinach, water chestnuts, green onions and
reserved marinade; cook until spinach is wilted and mixture is heated
through, stirring occasionally. Return buffalo to skillet; mix lightly. Garnish with
chili peppers. Makes 5 servings

|  |  | Buffalo Meat Balls 2 pounds ground buffalo
4 slices white bread - soaked with water, then squeezed out and broken
into tiny pieces
3 egg whites
1/2 cup grated Romano cheese
1 teaspoon dried parsley
1/4 cup minced onion, optional
1 teaspoon dried oregano
salt and pepper to taste
3 tablespoons ketchup
Combine the buffalo, bread, eggs, cheese, parsley and onion and season
with salt and pepper to taste.
Form mixture into golf size balls and brown in a large skillet over medium heat
for 5 to 10 minutes, or until well browned. Add to your favorite spaghetti sauce and simmer
until meatballs are completely cooked through, about 15 to 20 minutes.

|  |  | Buffalo Sausage Sauce 1Lb. Sweet Italian Buffalo Sausage
1 32oz. Jar prepared pasta sauce
1 small onion diced
1 teaspoon dried oregano leaves
1 teaspoon dried basil leaves
ground black pepper to taste
1 tablespoon sugar
Combine sauce, oregano, basil, pepper, and sugar in 2 quart sauce pan and place on low heat.
Slice sausage in 1 inch strips
In a fry pan, cook onion and sausage together over medium high heat until sausage is thoroughly cooked (about 10 - 12 minutes).
Combine onions and sausage with sauce and simmer for 1 hour stirring every 10 minutes.
Use with your favorite cooked pasta
